さて、バレンタインデーが来月にやってきます。

今年の新作は、ホワイトチョコレートです♪
タンザニアの生産者さんから直接購入した、未精製のカカオバター、カシューナッツ、バニラビーンズに、波照間島の黒糖とブラジル産有機砂糖を加えた、ヴィーガンの方にも召し上がっていただける乳製品不使用のホワイトチョコレートです。
色々な配合で試作を繰り返し、テンパリングにも何度も失敗しながらなんとか満足のいく商品が出来上がりました！ローストしたカシューナッツが香る、豊かな風味とコクのある、きなり色のホワイトチョコレートです。
こちらの写真はタンザニアで撮影したカシューナッツの実がなっている様子です。ひとつの実から一個しかナッツが採れないなんて、なんて貴重なんだろう、と、驚いた記憶があります。

@uchidamatsuri さんにホワイトチョコレートらしさ、里山の冬らしさを表現していただいた新パッケージも作りました♪
そのほか、大好評の藤野みかんのオランジェット、柚子ピール入り板チョコ、無添加ドライフルーツをトッピングした板チョコ、クラフトカカオコーラと柚子の琥珀糖など、こだわり素材の手作り品を詰め合わせています。

The cold season has arrived.
Even in Fujino, where we live, the mornings and evenings are below freezing every day, and a wood stove is indispensable.
Valentine’s Day is coming next month.
we have prepared a few Valentine gift sets.
This year’s new item is white chocolate.
This dairy-free white chocolate is made from unrefined cacao butter, cashew nuts, and vanilla beans purchased directly from Tanzanian producers, with brown sugar from Hateruma Island and organic sugar from Brazil, and is suitable for vegans.
After repeated trial and error in tempering, we managed to create a satisfying product! It is a richly flavored, full-bodied, unbleached color white chocolate with a hint of roasted cashew nuts.
The second and third photos show cashew nuts growing in Tanzania.
I remember being amazed at how precious they are, that only one nut can be harvested from each nut.
The illustrator @uchidamatsuri has created a new package that expresses the white chocolate and winter in the satoyama.
Other handmade products made with special ingredients include the very popular Fujino mikan orangette, a chocolate bar with yuzu peel, a chocolate bar topped with additive-free dried fruit, Craft Cacao Cola and yuzu amber sugar, and many more.
The gift sets are available in five types from A to E, and we have used the names of places in Tanzania with which we have a connection in naming them (^^).
